Crunchy, refreshing & light on the stomach, this salad is a treat to the taste buds too! When I started off making this , I could not guess that it would turn out so well ! It is packed with the goodness of cooling cucumbers, nutritious carrots & crunchy walnuts. Here comes the recipe :
Ingredients :
1 large cucumber, grated (thick)
1 medium carrot, grated (thick)
5-6 walnuts, broken/roughly chopped
1 or 2 Green chilies, chopped
2 medium Tomatoes, cut into ½” squares
½ of a large Capsicum, finely chopped
4 tbsp Coriander, chopped fine
Dressing :
2 tbsp Lime juice
1 tbsp Unrefined sugar
Rock salt, as per taste
1 to 2 tsp Olive oil
2 cloves garlic , crushed (optional)
Method :
In a bowl, mix the tomatoes, capsicum. Using your hands (or a masher) mash them together till slightly mushy. Add Green chilies and coriander & mash lightly again. Add walnuts, carrots & cucumbers. Mix well.
In a separate bowl, mix the ingredients of the dressing together. Beat well. Add to the salad. Serve immediately.
This crunchy salad is vegan, gluten free & low in calories, fat & sodium. Enjoy it as a side dish or as a meal by itself!
